Alma Tepec Chile Pasilla Mixe is a rare Chile grown exclusively in the rugged Sierra Norte region of Oaxaca, where volcanic soils, cloud-kissed air, and time-honored cultivation practices nurture its distinctive character. Each pepper is nurtured to full ripeness on the vine, then harvested with care to preserve its deep, complex profile. After harvest, the chiles are carefully smoked over a combination of oak and mesquite fuels, infusing them with a warming, resinous smokiness that recalls the terroir of the highlands. The smoked chiles are then prepared in traditional bamboo and clay ovens, where slow, even heat coaxes out nuanced sweetness and earthy notes before they are steeped in a rich sugarcane spirit for up to 12 months.
